Taco Soup – Easy Week Night Dinner.

Taco Soup time. I have to say of all the soups I do this one is the easiest by far. It requires little in the way of preparation and is ready in about 45 minutes or so. None of the measurements are exact because it’s a Mexican themed soup that allows you to throw everything into the pot and just go with it. Of all the soups I have shared this has to be a beginner’s type of soup.


A can of Pinto Beans

A Stick of Butter

1 lb of ground beef



Chili Powder

Garlic Powder

Lemon Pepper

1 can of Black Beans

1 can died Petite Tomatoes

Green Enchilada Sauce

Taco Seasoning

1 Can whole kernel corn or frozen corn

Beef Stalk

Toppings (Optional)


Sour Cream



Taco Soup Instructions

First step is to put your butter in a stock pot.  Then turn on the heat to the stove to medium high.  This will cause the butter to melt. Once it has melted take your ground beef and put it the pot to cook.  Make sure you get a wooden spoon to break up the meat so it can brown faster.  I would add a pinch of salt to the beef but that is always up to you.

Then you will empty out the entire jar of tomatoes onto the ground beef. Mix it around and then add the entire jar of pinto beans and black beans. Mix it around and then add the entire can of corn or bag. Once this has been added mix again. You then will want to add your chili powder, garlic powder and lemon pepper to taste.  You may add other ingredients that you might find that go with this soup like cooked rice. However, this will be up to you.

Now it is time to add the beef stock. You will empty out the box and then mix the food with the beef stock. Once this has been completed you may turn down the heat to you soup to a medium heat. Then add your enchilada green sauce. The final step is to add your taco seasoning.  Make sure to thoroughly mix the taco seasoning into the soup to ensure that there are no clumps. Now you will have to wait till it comes to a boil again. This should take about 10 minutes or so to do.  You will let it boil for 10 minutes and then you may turn off the heat.


Serving Taco Soup

Take your serving containers and add chips or tacos broken up. Place the soup on top then sprinkle some cheese and a dollop of sour cream. You may also want to add avocados on top to give it a splash of color.
